Quick Curried Cauliflower Rice

Whenever I want a quick low carb vegetable side dish, I can always depend on my curried cauliflower rice. All you need for this recipe is a food processor and no time at all!

The key is garam masala and coconut oil. Even though garam masala has tumeric in it, I add a bit more tumeric since the curcumin in tumeric is anti-inflammatory.

Quick Curried Cauliflower Rice

Ingredients: 

1 organic cauliflower
1 tbs garam masala
1 tbs tumeric
2 tbs coconut oil
salt and juice from half a lemon
  1. In a food processor, blend the cauliflower so that it resembles “rice.”
  2. In a pan, combine all ingredients and heat on medium while stirring occasionally.img_0672
  3. Once cauliflower is cooked, approximately 10-15 minutes, fluff with fork and serve! Finish with salt and juice from half a lemon.
